There are lots of books and courses that attempt to teach you LabView.
The best source for LabView education may very well be "from the horse's mouth": NI. Here are some of the course titles:
LabVIEW Graphical Programming Course
LabVIEW Basics I: Introduction -- The LabVIEW Basics I course prepares you to develop test and measurement, data acquisition, instrument control, data-logging, and measurement analysis applications using NI LabVIEW.
