Check out this slick new Humidity Temperature Data Logger...
It's the new HygroLog NT from Rotronic Instruments. Here's some info from Rotronic:

Both the HygroLog NT and associated HW4 software comply with FDA 21 CFR part 11 requirements. The HygroLog NT can be networked to the purpose of remotely monitoring and capturing data on a PC. Data logging within the HygroLog NT, combined with the capability of remotely downloading log files, provides protection against loss of data in the event of a power outage. Using a docking station, up to 7 probes and two external contacts can be connected to a single HygroLog NT.
